Low calories doesn't mean low energy, not all calories are created equal. Carbs are great energy, fat is even more energy but much slower to give it to you, and protein is more useful as a building block for muscle than for energy. It depends on your goals. If you need to work out, eat some carbs so you can do more reps and have a good work out. Not working out that day, maybe eat less protein and go for complex carbs etc.
And the reason to track calories is because we are shit at guessing how many calories are in our food, and judging portion sizes.
You can eat calorie dense food and feel like you didn't eat enough even when you met your calorie needs. True that's harder to do with natural 'healthy' food, but there are other benefits to calorie tracking such as knowing your TDE, seeing your progress over time, and in calculating your body fat and activity levels.
Data is useful. Knowing how much you're eating and how much your body is burning are also useful.
I cut by over 1000 calories a day, and I work out and do cardio. My energy levels are fantastic. As long as you're not starving yourself, it's not a problem.
